A true homage to tradition: the old school called wines made in this way "pista e'mmutta", literally "press (pista) and put in the barrel straight away (mmutta)".
The result was the very traditional and easy-drinking red wine from Etna: a light and crisp red, super refreshing and able to match fruitiness and minerality with irresistible drinkability.

AYUNTA

Cantina Ayunta is a winery located on the slopes of Mount Etna in Sicily. Nestled in a spectacular landscape, it takes advantage of the region's unique volcanic terroir, characterized by mineral-rich soils. Ayunta is dedicated to producing wines that reflect the authentic expression of this exceptional terroir. The vines benefit from a Mediterranean climate, with influences marked by altitude and proximity to the volcano, which makes it possible to produce wines with great finesse and aromatic complexity. The cantina focuses on indigenous grape varieties, such as Nerello Mascalese and Nerello Cappuccio, seeking to produce wines that tell the story of their unique origin through every sip.

Native Grape Varieties

Focus on local varieties like Nerello Mascalese and Nerello Cappuccio, enhancing the region's wine heritage. The wines reflect the unique identity of their terroir, with particular attention paid to the authentic expression of the characteristics of the soil and climate .

The Etna volcano: a unique terroir

The mineral-rich soils from the volcano contribute to the complexity and minerality of the wines. The vineyards benefit from a Mediterranean climate with significant thermal variations due to altitude, which is favorable for viticulture.

Old Vines and Heroic Viticulture

A heroic viticulture which guarantees limited production but of absolute quality. Among the different forms of vine farming on Etna, that of small trees is certainly the most distinctive.
